Today, August 22, 2020, in Puerto Rico we are at home due to the pandemic and especially today due to tropical storm Laura. My parents, my sister Natasha (Tashi) and I decided to stay together while the system passes through our area. As we drink coffee and prepare food for the day, my sister decided to do her specialty: keto desserts.
Thanks to the pandemic she has taken on herself to really learn how to cook. Her favorite part is of course: making dessert. I am extremely happy since I get to taste them and impressed. This is someone who would even burn pasta when we were in college and I always had to cook haha.
Today’s dessert is Keto Cinnamon Rolls with Coconut Flour Dough. We already tasted these and they are soooooo good that I decided to share. It goes without saying that they won’t make it to after dinner dessert.
I will include below the ingredients and link to the recipe she followed. I will also include affiliate links to the specific ingredients she used below as I think that made a great difference. Especially the coconut flour and the sugar substitute (Lakanto Monkfruit).
Ingredients:
Dough:
- 1/2 cup Coconut Flour
- 1/4 cup low carb sugar substitute
- 2 tablespoons of baking powder
- 2-1/2 cups of shredded mozzarella cheese
- 2 ounces of cream cheese
- 3 large eggs beaten
- 2 tablespoons of butter melted
- 1/2 teaspoon vanilla extract
Filling:
- 1/4 cup low carb sugar substitute
- 1 teaspoon cinnamon
- 3 tablespoons of butter (Tashi used 2)
Icing:
- 3 ounces cream cheese softened – Tashi microwaved for 30 seconds to soften
- 3 tablespoons butter softened – Tashi microwaved for 30 seconds to soften
- 1/4 cup low carb sugar substitute
- 1/4 teaspoon vanilla extract
- Low carb almond or coconut milk (if needed) – Tashi didn’t use it

NOTE: The recipe recommends parchment paper but the dough was still sticky and Tashi had difficulty rolling into a log. We think wax paper would work better for this.

You can use whichever you prefer but this Monkfruit Sweetner from Lakanto is great! It doesn’t have an aftertaste like Stevia does. I buy this one myself too.
